Whole Wheat Buttermilk Crepes

It’s up for debate.  Which are better, thick, spongy pancakes or thin, crisp pancakes.  In our house, they both win.  We love thick, spongy pancakes to soak up our rich berry syrup on a cold Sunday morning, but the day my family bought a crepe pan we were changed forever. The light, crisp texture of French crepes are a favorite pretty much any day of the week.  I admit, I used to exclusively use crepe mix from a package.  I thought there was no way I could duplicate that thin, barely there batter that baked up light and crisp on the griddle.  But the pre-made mixture was expensive, hard to find and had very little nutritional value short of the eggs I whisked into the powder.  It was time to break free of my crepe fear and give them a try. Let’s Talk Turkey: Does Deli Turkey Need Nitrites?

The answer is NO.  Repeat after me, No nitrites, no nitrites, NO NITRITES!!!  Okay, I just had a flash back to my old cheerleading days.

Turkey deli meat is one of those things that I never really thought too much about.  It’s always been the lean deli protein that came sliced, smoked, honeyed or roasted and when piled on whole wheat bread with mustard and veggies became my healthy lunch.  Or was it?  During this Out of the Box Food journey I’ve been looking more carefully at everything, and that needed to include turkey.  I tended to choose turkey over ham because it was supposed to be healthier, right?  Well, I’m learning that it’s not just about the product itself, but how the product is cured and what might be added to it that makes the difference. Granola Bars: Grab-and-Go Chemicals or Nourishment?

Granola bars stir up quite the controversy at our house.  My kids want to bring them to school for snack, but a nut-free school means no granola bars with nuts of any sort.  That rules out a lot of the granola bars on the market.  Then when we look at what’s left and examine what ingredients are actually in the remaining granola bars things really start to get interesting.  Let’s just say we’re left with…well, not much. Granola.  What image does the word “Granola” evoke for you?  I’ve always felt the word “Granola” was synonymous with “health”.  For me growing up, the word Granola evoked images of health food markets where you could barely fit down the aisle but you could find things like Wheat Grass and Hemp seed.  But now Granola is common, good food and chances are you can find a healthy, minimally processed granola at the average supermarket.  But not all Granola is the same and this is a perfect opportunity to discuss the importance (and ease) of reading labels.

The Holidays and Marshmallows – Part 1

A couple weeks ago my son pulled an old bag of marshmallows from the pantry.  With a look of pleading on his face, he asked if he could “Puhleeez have one” of the stale puffs of corn syrup.  I found myself staring at that bag I’d had in the pantry since the first summer campfire more than eight months ago and realized that in addition to being an integral ingredient in summertime s’mores, marshmallows also play a big role during the holidays.  They top sweet potato casseroles on Thanksgiving, are mixed into holiday fudge and cookie recipes and make a fun dreidel craft/dessert when pierced with a pretzel and dipped in chocolate.  They also top our cups of hot cocoa as we wait for Santa to come, and are an important ingredient in the ever-present rice crispy treats that grace our school bake sales and holiday parties. Thanksgiving

As the sun rises on Thanksgiving day, I will reflect on my life’s blessings.  Above all else I am thankful for my husband and children who bring constant moments of clarity to a sometimes unclear world.  I am thankful for the support of my family, the laughter and comfort of my friends, and those special moments of peace, when I can center myself, breathe, and appreciate all these gifts in my life. “Maple” Syrup: Fact or Fiction?

Last week at Out of the Box Food we discussed easy alternatives to frozen waffles and pancakes.  So what can we do this week to top those healthy, delicious waffles and pancakes?  Syrup of course!  Okay, this is a tricky one.  Real, honest-to-goodness maple syrup is great.  It’s single ingredient is natural, sweet and even better warm.  But if the amount of sugar in maple syrup makes your kids go a bit wacky like it does mine, then what can we top pancakes and waffles with on busy school mornings?  How about warm, thick blueberry syrup?  Sweet, rich strawberry syrup?  We getting somewhere?
