Out of the Box FoodSM Fish & Chips
Serves: 4
Cost per person: $3.63 per person
Special Equipment: Cast iron skillet (or other heavy bottomed skillet)
Ingredients:
- 1 1/2 lb cod (Tilapia can be substituted) ($12.00)
- 2 C all-purpose flour ($.32)
- 1 1/2 C seltzer water ($.25)
- 2 tbsp lemon juice ($.50)
- 1 tbsp baking powder ($.25)
- 1 C vegetable oil ($1.20)
- Salt & Pepper
- 1 recipe Out of the Box Food Oven Baked Olive Oil Potato Chips
Directions:
- Rinse fish and pat dry.
- Season fish with salt and pepper.
- Heat cast iron pan over medium high heat.
- Whisk together 1 1/2 C of the flour with baking powder. Add the seltzer water and lemon juice and whisk to combine.
- Put remaining 1/2 C flour on a separate dish and season with salt and pepper.
- Pour oil into hot skillet and reduce heat to medium.
- Roll fish in seasoned flour. Shake off extra and dip into batter. Let the excess drip off.
- Place fish in hot oil. Repeat with remaining pieces of fish.
- Cook until golden brown on bottom (approximately 4-5 minutes depending on heat of oil)
- Flip fish and continue cooking until golden brown on both sides.
- Remove fish to paper towel lined plate.
- Serve.
