Kid-Friendly Vegan Mushroom Soup

First let me preface by saying that every recipe I post on Out of the Box Food must first be kid-tested by my own children.  Having said this, yes…this mushroom soup has been kid tested AND approved by two fairly particular nine year old boys.  Don’t be intimidated by the words “mushroom” and “vegan”.  In fact, for the kids’ sake let’s just call this soup: “Souper Mushroom Broth”…later you can fill them in on the rest.

Kale for Kids – Part 2

Last week we made Olive Oil Kale Crisps, a fun and delicious way to introduce kids to the incredibly nutritious vegetable, Kale.  But where do we go from here?  The kids like the Kale as chips, but ONLY as chips, yet the beautiful bunches of brightly colored Kale call to me every Saturday at the farmers market.  I know we can only make so many batches of Kale chips before they tire of them – so how else can we prepare this incredibly nutritious vegetable?  How can we turn it into a meal they will enjoy? Mini Gougères Lunch Box Sandwiches

In our last post we made a whole grain alternative to a classic french pastry, Gougères.  The reason I tackled these little light as air delicacies was to ultimately turn them into a fun and fresh alternative lunch box sandwich for kids.  I know I’ll break out the recipe again down the road and turn them into sweet treats, fun appetizers…the possibilities are endless, but this week they’re going to become the basis for our lunch box sandwiches. Family Fish Night

With spring quickly approaching, lent in full swing and passover on it’s way, fish is being served in many homes this time of year.  For some, getting kids to eat fish is an uphill battle.  But when we take the pressure off of serving fish, it can be a great, fresh and healthy meal for kids and grownups alike. The “Corn Dog” Days of Summer

 

 

 

 

 

 

 

 

 

 

 

 

It’s summer!  Across the country, state and county fairs are offering loads of delicious processed foods on sticks.  Foods that kids love (and I hate to admit, some of us adults too).  Today as my boys and I strolled through the brightly colored booths at the Ventura County Fair, we inhaled the decadence of fried fair treats, creating memories of summer.  These are the memories we will eventually go back to on cold November afternoons, encouraging us to take out a box of frozen corn dogs in order to recapture the experience.  Hey, why not?   Frozen corn dogs are easy, inexpensive, delicious, and some brands are even made with healthy turkey dogs, right?  But it’s what lies within the box, underneath the list of thirty seven, no thirty eight ingredients that should snap us back from our sweet memories of summer and encourage us to look for food outside of the box.
