Red, White & Blue – And Chocolate Too

Happy 4th of July!  Though we are still in the process of updating our site in the redesign, I wanted to share a fun, kid friendly breakfast/dessert (yes, you read this correctly) that my son created in an attempt to convince my husband and I that he needed dessert the other night.  His creation was so delicious and nutritious, that it earned proud placement as this week’s post.  Enjoy!

Out of the Box FoodSM Chocolate Berry Yogurt Sundaes

Feel free to let your kids suggest & choose their own toppings for this fun and healthy sundae bar.  Toasted oats, toasted sliced almonds and other nuts, dried fruits and chopped stone fruits such as cherries, apricots and peaches also make good toppings.  Simply lay out bowls of the toppings and let each child create their own masterpiece.

Special Equipment: Microplane zester, zip-top baggie, kitchen mallet or rolling pin

Ingredients:

  • Greek Yogurt
  • honey
  • natural graham crackers
  • frozen berries (blueberries, blackberries & raspberries)
  • fresh berries (blueberries, blackberries & raspberries)
  • 72% cacao chocolate bar

Directions:

  • Prepare graham crackers but placing in zip-top baggie.  Seal baggie and gently pound with kitchen mallet or roll to crush with rolling pin.
  • Spoon Greek yogurt into bowls.
  • Drizzle honey over the yogurt and mix well.
  • Top yogurt with assorted toppings from sundae bar.
  • Shave dark chocolate onto top of sundaes using microplane zester (see photo below)
  • Enjoy!

It’s so fun to get kids involved in the kitchen.  Mine surprise me constantly with what they learn to  enjoy eating when they create it themselves.  Until next week…

    I am looking forward to showing this to my girls tomorrow. I think they will especially love hearing the story about how it came about and seeing the pictures! Thank you for posting this and helping us along the way to becoming a healthier family.
    They just found the love of plums last week (another little triumph).
