A Trip Down Blueberry Lane – Blueberry & Challah Breakfast Bread Pudding

Blueberry picking has been an annual summer tradition in my family for seven years now.  As a Southern California native, berry picking was not an activity I grew up with.  But fortunately for my kids, we were lucky enough to have the opportunity to move to Vancouver B.C. for a brief time when they were two.  What a gift.  While Blackberry bushes thickly lined the paths down to the sparkling sea, U-pick blueberry farms were only a short drive away – and we found ourselves taking that drive many times that summer. Valentine Pancakes

I admit, I had an entirely different post ready to publish this week.  But when my friend Samantha from Good Life Organics posted a Beet Pancake recipe from Weelicious on my Facebook Page, I knew I had to change things up.   Now, I already knew I liked to use beet “juice” as a food coloring, but Catherine McCord at Weelicious took it a step further – she pureed the entire beet and added it to recipes.  I love this idea!  The picture of her bright pink, beet pancakes instantly made me think “Valentines Day” so I used her idea of pureed beets, added them to my buttermilk pancake & waffle recipe, poured the batter onto the griddle in the shape of a heart and VOILA – Valentine Pancakes.  I hope you and your special Valentine enjoy these on Tuesday and well…why not celebrate all year!

Can Yogurt Actually Be Unhealthy?

We know how important it is to read labels on snack foods, boxed dinners and cereals but do we actually need to read the labels on yogurt?  YES.  If I’m learning anything during this journey it’s that you have to read the labels on everything. Yogurt should contain only milk, live yogurt cultures and any natural fruit they might add.  Should.  But many of the fruit flavored yogurts on the market contain a lot more than that.  I’ve seen some that contain carrageenan, others that contain high fructose corn syrup and artificial colors, and some fruit yogurts that contain no fruit whatsoever.  So how do you find yogurt that contains simply fruit, milk and yogurt cultures?  Two ways:  read the labels or mix up your own. …Jam.

Last week we deconstructed peanut butter.  This week we had to top it with a quick, healthy jam!  Making jam is a summer routine for my family but it requires a few pieces of special equipment, quite a bit of time, and in my case, a couple of scorching burns (none of which make for a fast Out of the Box Food alternative).   But since fresh, homemade jam can be such a treat, I knew we had to explore a quick and easy alternative for Out of the Box Food. Ice Cream Sandwich and Pimple Cream: The Common Ingredient

You ready for this one?  I’m not even sure if I’m ready to write about it, but it is DEFINITELY a food story that needs to be told.  Over the summer I took my boys to a popular indoor playground in Los Angeles.  You know the ones where your kids climb, swing, slide and basically wreak havoc for several hours in a padded room while you try desperately to tune out the constant drone of screaming?  Yup, that’s the one. Breakfast Bars – Amp Up or Fuel Up?

Last week a friend suggested we take a deconstructed look at breakfast bars.  As a working mother of two under four, her mornings are busy and rushed yet she wants to provide a healthy start to her kids’ day.  One day in a pinch, she picked up a nationally recognized brand bar for the following morning’s breakfast.  Ten minutes after eating the bar, her son was bouncing off the walls.  That little self-proclaimed “health” bar, had turned a quiet morning into a wild, stress-filled kickoff to the day.

Aren’t school mornings challenging enough? (more…)

Corn Syrup Roll-up – Where’s the Fruit?

You know ’em, those long, sticky, peel-and-eat rolls of sweet chemicals your kids love?  I just can’t bring myself to call them what they do on the package; “fruit” is just too far off what they actually are.  Corn Syrup Roll-up could work.  Or how about Artificial Color roll-up?  To make matters worse, my kids don’t even want regular roll-ups in their lunch boxes anymore, they want the ones that stretch to nearly a foot long!  So is it possible to make foot long real fruit roll-ups?  You bet. Popsicle Perfection

It’s August and it’s hot.  For me, August weekends are traditionally days for sprinklers and popsicles, sparkling pools and chilled watermelon.  In fact, life feels pretty close to perfect from the perspective of a shady chaise lounge in August; watching my children play and  listening as their laughter echo’s the joy of summer.  Ahhh, the sweet month of August. “Maple” Syrup: Fact or Fiction?

Last week at Out of the Box Food we discussed easy alternatives to frozen waffles and pancakes.  So what can we do this week to top those healthy, delicious waffles and pancakes?  Syrup of course!  Okay, this is a tricky one.  Real, honest-to-goodness maple syrup is great.  It’s single ingredient is natural, sweet and even better warm.  But if the amount of sugar in maple syrup makes your kids go a bit wacky like it does mine, then what can we top pancakes and waffles with on busy school mornings?  How about warm, thick blueberry syrup?  Sweet, rich strawberry syrup?  We getting somewhere?
