Fish & Chips

Part of our under $5.00 Value Meal series.  Fish & Chips can be made with fresh, whole ingredients and not deep fried for a healthy and inexpensive weeknight family dinner.

Out of the Box FoodSM Fish & Chips

Serves: 4

Cost per person: $3.63 per person

Special Equipment: Cast iron skillet (or other heavy bottomed skillet)

Ingredients:

  • 1 1/2 lb cod (Tilapia can be substituted) ($12.00)
  • 2 C all-purpose flour ($.32)
  • 1 1/2 C seltzer water ($.25)
  • 2 tbsp lemon juice ($.50)
  • 1 tbsp baking powder ($.25)
  • 1 C vegetable oil ($1.20)
  • Salt & Pepper
  • 1 recipe Out of the Box Food Oven Baked Olive Oil Potato Chips

Directions:

  • Rinse fish and pat dry.
  • Season fish with salt and pepper.
  • Heat cast iron pan over medium high heat.
  • Whisk together 1 1/2 C of the flour with baking powder.  Add the seltzer water and lemon juice and whisk to combine.
  • Put remaining 1/2 C flour on a separate dish and season with salt and pepper.
  • Pour oil into hot skillet and reduce heat to medium.
  • Roll fish in seasoned flour.  Shake off extra and dip into batter.  Let the excess drip off.
  • Place fish in hot oil.  Repeat with remaining pieces of fish.
  • Cook until golden brown on bottom (approximately 4-5 minutes depending on heat of oil)
  • Flip fish and continue cooking until golden brown on both sides.
  • Remove fish to paper towel lined plate.
  • Serve.
